I needed some creepy desserts to set the mood for our Mad Scientist Halloween Party. My friends arrived in costume reflecting the theme of being some sort of a MAD SCIENTIST or a product of MAD SCIENCE! Al dressed up as Doc Brown from Back To the Future while I dressed up as Edward Scissorhands. I think people were more disturbed that I was brow-less than anything else….
For our themed-party, I was inspired to make these jello eyeballs from reading and watching the videos from Japanstyle.info
Looks easy enough! Right?
Here is what you will need:
1. Ice Ball Tray (Makes 24 Balls)
2. Agar Agar Powder (This is what I like to use. You can find this at your local Asian market)
3. Assorted Food Colors (I picked up McCormick at my local grocery store)
4. # 1A Extra Large Round Metal Tip (Using the smaller side to make the pupil and the larger side for the iris)
5. Bag of Frozen Raspberries
6. 1 can of Sweet Condense Milk
7. Sugar or Agave Syrup
8. A few dinner plates
How to: Make Basic Jello with Agar Agar Powder
The Agar Agar Powder package says: 1 gram of powder to a 120 grams of water. I weighed it out and figured out that it equals to 3/4 cups water to about 1 teaspoon of agar agar powder.
Ingredients:
3/4 cups of water
1 teaspoon of agar agar powder
1 Tbsp sugar or agave syrup
Direction:
Mix water, sugar, and agar agar powder into a small pot. Place on the stove on high while constantly stirring. Bring to a boil. Once it comes to a boil turn the heat down to low to simmer.
Once you are ready to put into the mixture into the mold, turn off the heat and let it cool down for about 5 minutes.
How to Make Eyeballs. Part 1: Constructing The “Pupil” & The “Iris”
First we need to make the “pupil,” so we will need to make the color black. You can use black food coloring or you can put all the colors together to make the color black.
I used a small dinner plate and pour a thin layer of the jello mixture. I dropped in 1 color at a time until I got the color black. Make sure to blend well and set aside to cool.
Repeat the same step for the “Iris,” I used colors like green, yellow, and orange.
Once the jello mixture has all completely cool and set use the large round metal tip to make small circle cuts.
How to Make Eyeballs. Part 2: Building the Eyeball (The Tricky Part)
With guidance from Japanstyle.info, they recommend that you lay down the iris (the colored circle) then the pupil on top (the black circle). I made another batch of jello but this time I mixed in sweet condense milk. While the white jello was cooling this is how I built the eyeballs.
Here is what I did in my tray of 12:
1. Place iris in first into the mold.
2. Then place pupil on top of the iris.
3. Take 1 teaspoon of the white jello and pour into each cavity.
4. Take 1 frozen raspberry and place into each cavity.
5. Then slowly fill the tray up with the rest of the white jello mix.
6. Put the top onto the mold and push down.
7. The mold will want to push back up so I ended up putting a heavy pan on top to keep it down.
8. Let it sit there for a good 30 minutes before moving it into the refrigerator.
*I recommend doing 1 tray at a time. I tried doing 5 trays all at once and the jello started to set on my before I could pour the rest of the white jello mix.
After I took it out of the mold, I put it into a metal bowl and I walked around offering eyeballs to all my friends. They were a little cautious about trying one but once they had one they were hooked to have more! It has a really interesting texture and once you bite into one, it just kind of “POPS” in your mouth. Dare to try? Muhahaha! (Laughing manically)

haha @mikochu saw it and he said “omg it’s 3D!” and I put the leftover eyeballs into a ball and toss them into the rest of my raspberry marmalade and then I spiked it with a little bit of the Captain Morgan!
So creepy and fun! Can’t wait to try it out!
