What is X-Tudo? It’s a Brazilian Mega Hamburger


One of the things that Al really wanted to have during our stay in Brazil was to go get a Brazilian Hamburger called X-Tudo. The name comes from the English word “Chesse” in cheese burger. In Portuguese, the letter X is called chis, ch in Portuguese is pronounce like sh in English, therefore the letter X in Portuguese is pronounced “shees“, which is probably the closest sounding letter/word in Portuguese to the word “cheese” in English.

As a result, the Brazilian version of a burger is called X-”something” where the “something” describes what’s in it, for instance a X-salada (salada = salad) is a burger with lettuce and tomatoes, X-salada-bacon is a burger with lettuce, tomatoes and bacon, each one with more items than the previous, all the way to the X-tudo (tudo means everything) and by everything it means EVERYTHING. The typical X-tudo is composed of bun, patty, cheese, bacon, lettuce, tomatoes, fried egg, corn, peas, onions, ketchup, mustard, mayonaise and potato sticks. Yummo! And in most places, you can choose the meat as well, so your X-tudo can have either a hamburger patty, piece of steak, chicken breast or pork tenderloin. The following picture and the picture above were taken at during our trip to Brazil. In my opinion the X-tudo in was really big! It was very challenging to try to get a little bit of everything into one bite. I will admit that I ran into a situation of having a lock jaw so I gave up and went the fork and knife route.

Off course we had to try to make our own at home. Just like with any good meal, I believe that to make a great X-Tudo you must start with quality ingredients. We made our patties from high quality of grass fed beef and picked up as much fresh ingredients as we could find.

I have to admit that it is tough to keep all those ingredients between the buns. Most of them will start to burst out as you bite into it. One tip that has worked well was to hollow out some of the bread in the inside of the bun to create a “pocket” to better hold the fillings.

It also helped that Al had come across a mini keg of Bell’s Hopslam which certainly contributed to the success of this X-Tudo extravaganza.

Our home-made X-Tudo turned out pretty tasty, though it didn’t taste exactly like the one we had in Brazil. Why is that? I couldn’t tell you for sure, but it probably has to do with the difference in the flavor of the ingredients, but I can’t say for sure.

Overall X-tudos are really good. They provide a wide range of flavors and textures in a single, handheld meal. I love me a fried egg on my burger! Only now, I wish places will offer shoe string potato chips, peas, and corn as an option at those build-your-own burger places!
