Fat Cat Gourmet Foods: Passion Pequin Papaya

I like to make the salad first before preparing the fish!

I found the Passion Pequin Papaya by Fat Cat Gourmet Foods goes really pairs really well with the fruity quinoa salad with mango and parsley. This dish was inspired by Bravos’s Top Chef, Chef Kenny’s recipe that he prepared at the Bravo’s Top Chef Tour. Once I tasted the Passion Pequin Papaya hot sauce, I knew that it would be a match made in heaven with this Five-Spice Coffee Rub Tilapia with Mango Parsley Quinoa! You will notice that the sauce enhances the flavors of the mango and puts the fish to another level of dynamic flavor.

Five-Spice Coffee Rub Tilapia

For the Rub:

1/2 cup of Fresh Ground Coffee (Not the instant stuff)
1/4 cup brown sugar
3 Tablespoon of Five-Spice or substitute with Cinnamon (Add more if you like it to be more spiced)
1 Teaspoon of Powder Cumin

Mix all ingredients together and use a spoon to distribute evenly over the fish fillet of choice. Rub in the dry rub on the fish and pan fry. Pan fry for about 5 minutes on each side on medium heat. I usually keep the pan lid on for the entire time.

Mango Parsley Quinoa Salad

How to cook Quinoa:

1 cup Quinoa
1-1/2 cup water

Put both the Quinoa and water into a small sauce pan. Bring to boil on high. Once it boils, put the lid on and turn it down to low. Keep the lid on for 15 minutes. Once the time is up, take it off heat and fluff with fork.

I like to put the cooked Quinoa into a big mixing bowl to cool down faster and set it aside while I prepare the mango parsley salad part.

Mango Parsely Salad:

1 bunch of fresh Parsley
1 to 2 whole Mangoes

Rinse the parsley, chop up, and put into mixing bowl. Peel the mangoes, cut into cubes and place into same mixing bowl as the parsley. Season with:

1 teaspoon of salt
1 teaspoon of powder cumin

Once it is all mixed together well, incorporate with the bowl of Quinoa. Stir together thoroughly and keep cool before serving.

      Yes, I just need to do it again but this time actually measure everything out! haha. I tend to just “wing it” … a lot and this was one of them!
