Ronald McDonald House near The Florida Hospital for Children

It was a successful Share-A-Meal at the Ronald McDonald House!

Mega Yummo hosted a group of participants in the Share-A-Meal Program on May 1, 2011. Mega Yummo & Friends put on quite the spread for those lovely families staying at the Ronald McDonald House on the campus of Walt Disney Pavilion at Florida Hospital for Children.

I had a few ideas on what to make for lunch but since Cinco De Mayo was just around the corner, I was inspired to have a Tex-Mex themed menu. Here is what we served up and the recipes too!

Guacamole with Yellow Tortilla Chips, Featuring Rick Bayless’s Guacamole Recipe from the Book Fiesta at Rick’s: Fabulous Food for Great Times with Friends


Recipe from Rick’s book:

5 Strips of thick bacon
3 medium-large (about 1¼ lbs) ripe avocado
½ medium white onion, chopped into ¼-inches pieces
2 or 3 canned chipotle chiles en adobo to taste, removed from the can, stemmed, slit open, seeds scraped out and finely chopped
1 medium-large round ripe tomato, cored and chopped into ¼ inches pieces
¼ cup loosely packed, coarsely chopped fresh cilantro
Salt
1 or 2 tablespoons fresh lime juice

Fresh Mexican Salsa with Yellow Corn Chips, Featuring Carmen Acuna’s Salsa Recipe


3 cans Ro-Tel tomatoes with green chiles or jalapeños
1 bunch cilantro
1 bunch green onions or med. onion
2-3 tsp garlic
salt to taste

Southwest Salad

Chopped Romaine Lettuce, Spring Mix, Grape Tomatoes, Shredded Cheese, Black beans, Corn, with Multi-color Tortilla Strips

with choice of Spicy Ranch Dressing or Butter Milk Ranch Dressing

Turkey Chili with Cornbread

2 lbs of lean ground Turkey
2 cups of diced bell peppers, diced
1 large onion, diced
1 bunch of celery, diced
2 cans of diced tomatoes
3 tablespoons of minced garlic
2 cups of chicken stock
1 pack of Brown Bag Chili

In a big pot, cook the turkey meat first with garlic until golden brown.  Stir in chili mix and vegetables. Add stock and let it simmer for an hour. You can do this recipe in a crock pot.

Cornbread, Featuring Kathy Dickinson’s recipe

2 boxes Jiffy cornbread mix
½ cup sugar
¼ cup veg. oil
2 eggs
2 cups sour cream

13×9 pan greased

Preheat oven to 350 degrees. Mix all ingredients together and pour mix into the greased pan. Put in oven for 30 minutes. Let it cool before cutting into squares.

Grilled Chicken Avocado Ranch Wraps


1 Pack of 12, 12″ Spinach Tortilla Wraps (found these at Whole Foods Market)
Romaine lettuce
Spring mix
Slices of avocado
Shredded Cheese
Chicken
1/2 cup of Ranch Dressing
1/2 cup of Sour cream

Minced cilantro

The sauce: Mix ranch dressing, sour cream, and the minced cilantro all together

Publix Chicken Fried Chicken

We bought fried chicken and reheated them in the oven after we finished baking the corn bread. I put it in the oven at 425 degrees for 20 minutes. It came out crispy and hot.

Everything turned out awesome! And I owe it all to my dynamic team of volunteers: Dahinys Diaz, Marisela Del Cid, Carmen Acuna, Jessica Vivian, and Tina Nguyen. My volunteers had such a great time that they want me to organize another lunch date! Looks like Ronald McDonald House of The Florida Hospital for Children has gotten another set of people dedicated for the cause.
