Shrimp crackers also known as shrimp or prawn chips. This is a very popular snack in Asia. You can find these at your local Oriental store, if you could ever locate your “local” Oriental market. Anyways, they are pretty inexpensive, this package was found at Saigon Market in downtown Orlando for $1.69. I have found over time that this exact product has a much MUCH better flavor in comparison to other brands. It is basically made from tapioca flour mixed with a little bit of the shrimp essences. It is lightly flavored and when it is prepared right, you will find that when the crackers or chips hits your tongue it starts to crackle a bit… it is kinda interesting. It is very popular snack with kids and adults. You can be creative and add some to your Asian inspired salads or meals.

How do you prepare it?

Well it is pretty simple, you can use a small pot with fill it half with with oil. I recomment getting the oil approximately 350 degrees Fahrenheit.

I normally just check the temperature of the oil by testing it out with a little piece of the tapioca chip and throwing it the oil to see how fast it reacts. If it reacts instantly it is time to switch the heat from high to medium. If there delay, then that means you have to wait a bit longer.

Notice the small dark brown piece up on the left side of the pot, that is the color you DO NOT want. That is a sign of overcooking or the temperature of the oil is too hot. But you will notice that you hard tapioca chips sinks to the bottom and floats back up 4 times its original size! Which is why I recommend this brand, Komodo…A Product of Indonesia.

Once it is ready to be removed from the hot oil, I recommend you placing it on a pile of paper towel for it to cool down and also absorb off some of that excessive oil that may be left on the chip. You can continue this process until you reach a nice party size like this to serve to your guest.

One thing to know about these crackers or chips, they don’t taste very good if you leave them out in room temperature for an extended period of time, like say beyond 3 to 4 hours, they start tasting stale and that is not very Mega Yummo…. that is actually get Yuckos! So if your pile of shrimp chips doesn’t get annihilated in the next couple of hours, it is recommended to keep them in the oven on a warm setting of 100-250 degrees Fahrenheit.

So if you are ever in your local neighborhood Oriental Market, and you are feeling adventurous why don’t you try out this brand of shrimp crackers and make an “Experimental Cooking Night!” Be sure to keep a fire extinguisher nearby if you are inexperienced fry cook. ;o)
